Last Summer Virtual Class: July 10 at  noon

As you may know, we've been busy putting the finishing touches on our cooking tours to Italy for fall 2021 and spring and fall 2022. We'll be taking small groups to Tuscany and Puglia, two of Italy's most beautiful regions whose cuisines offer a wide range of delicious specialties.

If you can't join us in Italy this year or next, you can learn some of the dishes that have made Italy famous by taking our virtual cooking classes. The next  live virtual cooking class is on July 10 at noon.

We’ll start off by making fresh gnocchi (if you want to buy ready-made or sub in dried pasta, you certainly can) tossed with an aromatic pesto that features peppery arugula and savory olives. (Not a fan of olives? Omit them and throw in a few sundried tomatoes if you like for extra umami.) As a main course, we'll slow-poach salmon (chicken works perfectly for anyone not fond of fish) in a shallot, rosemary, and white wine sauce; there's a subtle trick to this dish that ensures success every time. And for dessert, we’ll teach you to work with phyllo dough; it’s not as tricky as you may fear, and the filling we’ll prepare is so good you might just want to make double and serve the rest over ice cream!
