Our Best Chocolate Biscotti & More!
When you cook for a crowd, it's important to select recipes that are easy to scale up and that lend themselves to advance preparation. This month's new recipes all fit that bill. First up: whole wheat potato gnocchi in a basil-scented tomato sauce. The gnocchi can be made hours ahead and refrigerated, or even frozen if desired (just don't thaw them before boiling). The tomato sauce takes minutes of work and reheats perfectly. If you don't love whole wheat, just use all-purpose flour instead. Ligurian-style chicken braised with artichokes and olives is a great main course for a crowd; you can add a few diced Yukon potatoes to the simmering sauce for a heartier dish, or swap mushrooms for the artichokes. The chicken marinates for a day (longer is fine too) in the refrigerator, and the sauce can be made a few days ahead; just sear the chicken 1 hour before serving, warm the sauce, and drop the seared chicken into the sauce to finish cooking before the big meal. Our favorite chocolate and hazelnut biscotti are the ideal holiday cookie. Rich but not too sweet, they can be baked days ahead and wrapped in plastic. Hold the baked logs at room temperature and don't slice them until you're ready to serve the biscotti so they stay extra moist. If you try these recipes for your holiday table, please let us know.
