As you know from our last email, we've been busy planning our 2021 and 2022  culinary tours. But even if you can't join us in Tuscany or Puglia this year or next, you can savor many of the specialties that have made Italy famous by trying the new recipes we post on the video site every month.

Luscious doesn't even begin to describe the incredible flavor and texture of our just-posted molten chocolate cake with fresh whipped cream. This recipe WORKS: we've used it at our cooking school for groups as large as 150 and as intimate as 6 people, and it can be made ahead and held in the refrigerator or freezer if needed, which makes entertaining and planning ahead a breeze. Try it and you'll never buy a lava cake kit again. It may also spoil you for any version offered at a restaurant, especially if you go out of your way to buy the best chocolate and the best butter available.

Another amazing recipe we just added to the site is for a very modular, very colorful, and very refreshing shrimp, olive, and tomato salad over arugula. Why modular? Because you can swap another protein for the shrimp. We've made this with snapper and monkfish instead to great effect; chicken or turkey breast is just as lovely; and for a no-cook version, Mozzarella or Burrata are perfect.
