Hello and happy New Year!! We hope you had a peaceful holiday season. Our “down time” was spent filming, editing, and creating content for the video site. The result is more than a dozen new recipes that we are proud to share with you. Here are just a few: Umbria’s famous Chicken Cacciatora; Branzino in Artichoke-Olive Sauce, a favorite dish from Liguria; Sicilian-inspired Cannoli Cheesecake; Farinata, a Ligurian chickpea flour pancake with a venerable history; two pasta sauces that take just minutes of active work, Creamy Mushroom Sauce and Toasted Saffron, Pea, and Cream Sauce; Wine-Poached Shrimp in Parsley Salsa Verde, a main course that makes the most of the classic pairing of shrimp and parsley; hearty Smoked Pork Chops with Apples; addictive Cinnamon Puff Cookies; and more.

In addition, we uploaded a video on how to skin a filet of fish (spoiler alert: this yields a bonus ingredient, crispy pan-fried fish skin, that is just incredible as a garnish atop a seafood salad!!), our favorite marinade for chicken, and more in our Basic Recipes & Techniques section.
