Italian food is extremely varied and deeply regional. From making fresh pasta by hand to kneading focaccia dough, roasting and braising meats, poaching fish, whipping up amazing desserts, and more, each class at the villa will focus on key Italian culinary techniques and will culminate in a full Italian meal. By week's end, you'll have perfected many essential culinary skills and learned dozens of Italian dishes. We even bring our sourdough starter on tour (he's been nicknamed Bob, Joe, and Stewy by tour participants thus far!) so you can learn to bake crusty sourdough loaves and focaccia!
We have selected restaurants in nearby towns where you can enjoy a taste of the local cuisine. Some restaurants are elegant, others cozy, but all will provide us with a memorable gastronomic experience. The only prerequisite is to bring your appetite, because the meals will be generous and wine is always included! (One repeat tour participant suggested wearing pants with an elastic waistband!)
All our tours, no matter the regions we visit, are a way to enjoy Italy through a culinary lens. The only prerequisite is a love of food and an appetite for pleasure (and maybe some pants with an elastic waistband). Group size varies depending on reservations and accommodations, but we max out at 25 participants, which makes for highly interactive cooking classes, fun meals, lots of laughter, and plenty of new, lasting friendships.
All our tours focus on smaller destinations; we figure you can visit Florence, Rome, Venice, and Milan on your own, so we include small towns and out-of-the-way villages in our itineraries. We always seek out local food producers who work on an artisanal level, and we reserve tables at each region's most characteristic restaurants (some fancy, others not so much). Our daily cooking classes are all about getting involved and hands-on: we make a full menu each morning, then sit and enjoy our culinary creations with wine before heading out to discover nearby towns.
These are the similarities, but there are some differences... Read on to see what makes each tour distinctive and what you can expect in each destination.
We stay at a 4-star hotel by the sea in the northern Italian town of Sestri Levante; this means you can walk around town in the mornings before cooking class, or after dinner you can stroll and savor a gelato at an artisan gelateria. If you want to swim, there are two private saltwater pools at the hotel and a quaint beach a minute's walk from the hotel. The region is hilly but the towns we'll visit are mostly flat (except the Cinque Terre) so this is an easy terrain for walking. We visit towns like Portofino, Genova, Chiavari, Camogli, Santa Margherita, Rapallo, and more by private bus; some short train rides and scenic ferry travel is included. If you love the sea, this is the tour for you.
Liguria Tour DetailsWe stay in a private villa with a pool and a huge woodburning oven, 45 minutes from the art city of Arezzo. The villa is immersed in nature (there are olive groves and cypress trees as far as the eye can see). All travel is by private bus, and the terrain is generally hilly. Because the villa is located in Tuscany on the border of Umbria and the Marches, we visit all three regions, so you get to taste three distinct cuisines. Here you'll see the iconic central Italian landscape: rolling hills, vineyards, olive trees. We'll visit Gubbio, Montepulciano, Arezzo, Spello, Frontino, and other medieval towns. The wines in this area are second to none and include heavy hitters like the super Tuscans and Vino Nobile di Montepulciano.
Tuscany & Beyond Tour DetailsThis tour is designed for people who enjoy tourism off the beaten path and offers the unique opportunity to discover three very distinct Italian regions. We’ll divide the tour between two exclusive agriturismi: one situated in the idyllic countryside of the Salento (known as the most beautiful part of Puglia), and another on the wild Ionian coast of northern Calabria, from which we’ll take day trips to Civita, Altomonte, Rocca Imperiale, and other little-known treasures of southern Italy. We'll also spend a day in the mythical city of Matera, in Basilicata, a place so unique that it enjoys UNESCO status and has been immortalized in dozens of movies including The Passion of Christ, Wonder Woman, and James Bond's No Time to Die. Puglia, Calabria, and Basilicata are famous for their semolina pastas and breads, delectable fresh and aged cheeses, robust meats, simple fish dishes, and Greek-influenced desserts, so expect astoundingly abundant, delicious meals!

This site, as well as our company, RUSTICO COOKING, is our baby.
Micol was born in Milan and moved to Montreal in 1977. Dino was born in Montreal. We've been together since our days at McGill University and married since 1995. Dino has a PhD in biochemistry and Micol has a culinary degree.
Micol has written three Italian cookbooks, including the James Beard-nominated Rustico: Regional Italian Country Cooking. Together we ran a cooking school in NYC from 2004 to 2020.
After many years of going back and forth from the US to Italy, we made our dream come true and moved to a small town on the Ligurian Coast in 2023.

When we left you... started our car and drove off, we immediately had "group withdrawals." Fausto had given Susan an U' Giancu musical CD. We hoped some music would help us from missing our group so much. Is it possible that the rental car did not have a CD player?! We were not even one block away, before we agreed to pull off the road.
