Einkorn Bread

I don’t know if you ever heard of einkorn. If you haven’t, you aren’t alone: most people have no idea what it is. Despite its name, it isn’t a variety of corn. It’s actually thought to be the oldest form of wheat, and supposedly has never been hybridized like modern wheat. Einkorn  means “one grain” in German, because it has only one grain per stem, while other varieties of wheat have several groups of grain.

I first heard of einkorn a few years ago, when I was researching farro. Einkorn is one of three main types of farro wheat, called farro piccolo (little farro) in Italian. It grows well in hardy climates, and has a much higher vitamin and nutrient content than modern wheat varieties. While it contains gluten, and is actually higher in protein than even bread flour (around 20% protein content as opposed to around 14%), einkorn may contain a type of gluten that some people with gluten intolerance can digest more easily. However, it was close to extinction until a few years ago, because harvesting and milling is much harder and more costly, and the yield is far lower, than with modern wheat varieties.

Since I love baking bread (if I could, I would bake every day… but being a family of just two, there is only so much bread we can consume!), I was intrigued at the prospect of baking with einkorn flour. Would the bread taste significantly different? Would it rise as well, or be leaden and heavy, like many undoctored whole wheat breads can be? I didn’t want to add more yeast than usual to make it rise higher, as an abundance of yeast gives bread an artificial taste and an overly light crumb. I didn’t want to add vital wheat gluten. I didn’t want to add sugar or fat or anything other than what I usually put in my bread dough: just flour, yeast, salt, and water. This way, I figured, I would really taste the difference between einkorn bread and bread made with modern wheat.

So last week, I baked my first batch of einkorn bread, using flour I picked up at my local market. (You can buy the flour as well as the whole berries from Jovial, the world’s largest producer of einkorn, online.) Since the gluten in einkorn is apparently not activated by kneading, I skipped the kneading step and simply stirred the dough a minute or two, then let it rise overnight at cool room temperature (if your kitchen is warm, refrigerate the dough). The bread rose very, very slowly at first, then picked up speed in the last few hours of rising. I took care not to deflate its air bubbles in the final stage of shaping, and let it rise again before slipping it into a moderately hot oven, and it emerged golden and fragrant 40 minutes later.

The result: Delicious, wheaty, sweet, moist, definitely worth repeating. It didn’t rise as much as bread made with modern wheat, but it had a pleasant chewiness and staled far more slowly than modern wheat bread: in fact, it was still good the next day (I propped it on its cut side so no air would compromise  the open crumb). Try the recipe below; it’s easy and rewarding, and you’ll be helping a grain once vital to humanity to flourish once again.

Makes 1 loaf (about 1 pound)

  • 2 cups einkorn flour, plus extra for sprinkling
  • 1/2 teaspoon instant yeast
  • 1 teaspoon fine sea salt
  • 1 cup room-temperature water, plus extra as needed
  • cornmeal for dusting

Place the flour, yeast, and salt in a large bowl. Mix well with a wooden spoon. Add the water slowly, stirring constantly. When all the water has been absorbed, determine if you need to add a  little more water or not; einkorn flour absorbs water more slowly, and doughs made with einkorn should be somewhat sticky if the bread is to bake up light rather than heavy. The dough should feel sticky when touched, but not like a batter.

When you are satisfied with the texture of the dough, stir it a minute or two. Then cover the bowl with plastic wrap, and place a plate on top of plastic wrap  to prevent light from filtering through (the bread can develop an orange hue if the  dough is exposed to light, due to the high amount of carotenoids in the flour; carotenoids are very good for us, as they are anti-oxidants, so the high amount of carotenoids is another good thing about einkorn).  Set aside to rise for 12 hours.

Uncover, and gently deflate and reshape the dough to redistribute the yeast (this helps bread dough to rise better). Cover again with the plastic wrap and the plate, and let rise again until doubled, about 12 more hours.

When you are ready to bake, place a baking stone on the bottom rack of the oven and preheat the oven to 350 degrees (preferably set on convection bake).  Line an upturned baking sheet with parchment paper and dust it with cornmeal.

Sprinkle your counter with cornmeal. Gently turn the dough onto the cornmeal without deflating it. Gently tug into a long rectangle, about 10 inches long by 4 inches wide; if the dough is sticking to your hands, wet your hands as you would if you were handling meatballs. Place on the cornmeal dusted parchment paper atop the upturned baking sheet and dust the top with flour. Cover with plastic wrap and let rise 1 hour.

Uncover (the plastic wrap may have stuck here and there).  Dust the top again with a bit of flour for a rustic look.  Transfer to the baking stone using the baking sheet as a peel (don’t bake the bread on the baking sheet though, just on the parchment paper).

Spray 3 times with water during the first 10 minutes of baking. Bake for a total of 35 to 45 minutes, or until the bread is richly golden. The bread should sound hollow when thumped on the bottom. Cool on a rack, removing the parchment paper first to allow air to circulate from  the bottom and prevent the bottom crust from getting soggy.

Cool completely before slicing. This bread is excellent spread with raw honey!

Crispy Polenta & Olive Fougasse

Fougasse is a ladder-shaped bread from Provence, similar in many ways to focaccia (even the name hints at shared roots). You can make fougasse with any type of yeasted dough; pizza dough or a simple bread dough enriched with olive oil work very well. It’s all about the shaping: several slits are cut into the dough after the second rising, so the bread bakes up crispier than usual thanks to the additional exposed edges.

My favorite fougasse includes fresh herbs such as thyme or rosemary. Lately I have been adding polenta to the dough, a nod to the cornmeal doughs made in Calabria and Abruzzo, which are typically baked until quite crisp and served floating in thick vegetable soups or passed alongside savory cheeses and salumi. Adding minced black olives to the dough gives it an addictively salty bite; you can omit the olives for a sweeter, more neutral taste and lighter color.

The bulk of this dough is polenta, with just a little wheat flour to provide gluten and lift, so the fougasse bakes up crispy outside and a bit dense and cakey on the inside. It tastes like an old-fashioned bread should: hearty, rustic, and full of character.

Makes one 12-inch fougasse (serves 2 hungry people or 4 more reserved eaters)

For the dough:

  • ¾ cup stone-ground coarse polenta
  • ½ cup unbleached all-purpose flour, plus extra as needed
  • ¾ teaspoon instant yeast
  • ½ teaspoon fine sea salt
  • ¼ cup pitted black olives, such as Kalamata or Gaeta, chopped
  • 1 tablespoon extra-virgin olive oil, plus extra for greasing the bowl
  • ½ cup plus 1 tablespoon warm (100°F) water, plus extra as needed

To bake:

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon water
  • ½ teaspoon coarse sea salt

To serve:

  • 1 tablespoon extra-virgin olive oil

Make the dough: Place the cornmeal, flour, yeast, and salt in a large bowl. Mix well with a wooden spoon. Add the olives and olive oil, and mix again. Pour in the water, adding enough to make a soft dough that gathers around the spoon.

Add a little more water if the dough is dry or a touch of all-purpose flour if it is sticky. Turn out onto a lightly floured counter and knead for 10 minutes, or until smooth and silky and elastic. It is fine if the dough sticks a little bit to the counter; the faster you knead it, the less it will stick; and the less it sticks, the less flour you will add, resulting in a lighter fougasse once baked.

Transfer the dough to an oiled bowl. Shape into a rough ball, and turn to coat with the oil. Cover the top of the bowl with plastic wrap, and let rise at room temperature until almost doubled, about 1 hour. At this point, refrigerate the dough overnight so the dough develops a deep, sweet, complex flavor. (You can skip this step if you are in a rush, but the fougasse will taste more flat.)

A few hours before you are ready to bake, remove the dough from the refrigerator, place it on a very lightly floured counter, and knead it a few times. Return it to the bowl and cover again with the plastic wrap.

One hour before baking, preheat the oven with a baking stone in it to 425°F (preferably set on convection bake).

Turn the dough out onto a very lightly floured counter and stretch it into a 12-inch long by 6-inch wide rectangle. Transfer to a piece of parchment paper. Place the parchment paper on an upturned baking sheet. Cover with plastic wrap and let rest 30 minutes, or until starting to puff a bit.

Using scissors, cut decorative slits into the dough, creating a ladder shape. Stretch each aperture created by each slit with your fingers so there is more crust exposed.

To bake: In a bowl, whisk together the olive oil and water. Brush over the fougasse. Sprinkle with the coarse salt.

Slip the fougasse (still on the parchment paper) onto the hot baking stone, using the upturned baking sheet like a pizza paddle to push off the parchment paper. Immediately close the oven door.

Bake on the baking stone in the preheated oven for 20 minutes, or until golden brown all over and crispy around the edges, spraying the oven floor with ¼ cup of water 3 times during the first 10 minutes of baking.

To serve: Cool on a rack 10 minutes, brush with the olive oil, and cut into wedges before serving.

Dressing Salad the Italian Way

Whenever we serve salad at our cooking classes, invariably half (or more!) of the class participants ask me what is in the dressing: “What did you put in the dressing?? It is so delicious and so light!” This is such a familiar question that I finally realized it was time to write about it. It is so very simple to make a good salad, but unfortunately most people don’t know how.

Here goes. Start with the very best salad greens; they should be perky and firm and unblemished. I usually choose several varieties (for example, arugula, Boston lettuce, Romaine, oak leaf, and radicchio) so there are textural and color and flavor contrasts, making the salad more interesting. Wash the greens thoroughly and spin them dry. A little clinging water will water down the flavors of the salad, so DRY the greens well. If you are not using the greens right away, refrigerate them in a large bowl that will allow easy tossing later, wrapped in several layers of paper towel.

When you are ready to serve, and no sooner than that, tear the greens (if needed) into bite-size pieces. Avoid cutting unless you are sure that your knife is very sharp. And here comes the most important part: Season amply with fine sea salt and give a gentle toss to coat well. Next, add the acid of your choice (most often, I use freshly squeezed lemon juice at home, or balsamic vinegar at the cooking school). Toss gently again to coat. Finally, pour in about twice to three times as much extra-virgin olive oil (the best you can afford) as the acid you used, and sprinkle with freshly ground black pepper. Toss gently again. Taste. Taste again. The salad should taste bright, lively, and full; if it is flat, add a touch more salt and toss gently again. Still flat? A bit more acid, and another gentle toss. Then onto plates right away before it wilts.

Notice the repeated emphasis on the word “gentle.” Greens should be tossed delicately, to avoid bruising, and your hands are the best tool for this job.

It is crucial to toss the salad in a very large bowl, also to avoid bruising the leaves. But the most important factor in achieving a salad with proper flavor and a light texture is to first season with salt, then with acid, and lastly, with fat. If you reverse the order in which you add the acid and fat, the fat will create a barrier that prevents the acid from coating the leaves, and the salad will be heavy as a result, lacking in brightness. And if you add salt after tossing with the fat and acid, the salt won’t flavor the greens as efficiently.

Here is a general recipe to follow. Less is more when it comes to salad, so you taste the greens and feel refreshed after eating the salad; salad should not be drowning in dressing, it should just be coated lightly with as much acid and fat as needed to bring out its intrinsic flavors. Serve salad after the main course to cleanse the palate, the Italian way, or before the meal if you prefer it as a palate-teaser.

Serves 2

  • 3 ounces salad greens, washed and thoroughly dried
  • 1/4 teaspoon fine sea salt, plus more to taste
  • 2 teaspoons freshly squeezed lemon juice or balsamic vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1/8 teaspoon freshly ground black pepper, plus more to taste

Tear the greens into bite-sized pieces if needed into a very large bowl. Season with the salt and toss gently but thoroughly. Sprinkle with the lemon juice or vinegar and toss gently again. Pour on the olive oil, and toss gently again. Season with the pepper, and toss gently again. When all the leaves are evenly coated, taste, and adjust as needed. Serve within minutes.

Braised Greens with Garlic & Chili Flakes

Turnip greens can be hard to find. When I happened upon a bunch of turnips, their leaves and stems intact, perky and green, I was so excited. I knew just what I wanted to do: the turnips would get blanched before baking with milk, caraway, and Parmigiano (so soothing on a cold day), and the greens and stems get treated to that typical Italian slow-cook that renders them meltingly tender, unctuous, just shy of bitter. If you can’t find turnip greens, broccoli raab works very well. You can also serve these greens as a pasta sauce, with short, concave pasta like orecchiette; just add freshly grated Pecorino when serving.

Serves 2

  • 1/2 pound turnip greens and stems, washed thoroughly and coarsely chopped
  • 2 tablespoons plus 1 teaspoon sea salt
  • 1/4 cup extra-virgin olive oil
  • 2 garlic cloves, chopped
  • 1/4 teaspoon chili flakes
  • water as needed

Bring 2 quarts of water to a boil. Add the turnip greens and stems and 2 tablespoons of the salt. Cover and cook 5 minutes, or until tender. Drain and rinse under cool water to stop the cooking, then shake dry.

Place 2 tablespoons of the olive oil, the garlic, and chili in a 2-quart saucepan. Set over a medium-low heat and cook until just fragrant, about 2 minutes. Before the garlic takes on any color, add the greens and stems. Stir well, season with the remaining 1 teaspoon of salt, and cook, stirring often, about 20 minutes. You may need to add a splash of water now and again, to prevent the greens from sticking to the pan. There should always be some liquid in the pan; a few tablespoons is right.

When the greens are silky-soft, remove from the heat and stir in the remaining 2 tablespoons of the olive oil. Taste for seasoning and adjust as needed. Serve hot, warm, or at room temperature.

Filoncino (Italian Baguette)

This bread is the Italian cousin of France’s baguette. Made with just flour, water, yeast, and salt, it has a light, airy crumb with small air bubbles. Be sure to allow for the overnight rising in the refrigerator, so the bread acquires a deep, rich flavor.

Makes two 14-inch loaves

  • 3 and 1/2 cups bread flour, plus extra for the counter
  • 1 teaspoon instant yeast
  • 2 teaspoons sea salt
  • 1 and 1/2 cups room-temperature water, plus extra as needed
  • 1 tablespoon extra-virgin olive oil
  • 1/4 cup cornmeal

Combine the flour with the yeast and sea salt in an 11-cup food processor. Process for 5 seconds. Slowly add 1 and 1/2 cups of room temperature water through the feed tube while the processor is running; the dough should come together, forming a somewhat sticky, smooth ball. Add a little more flour if the dough is wet or a little more water if it is dry.

Once the dough forms a ball around the blade of the food processor, process for 45 seconds (do not overprocess or the dough will become too hot and you will compromise the formation of the gluten strands).

Turn the dough out onto the counter, knead by hand for a few seconds, shape into a ball, and transfer to a lightly oiled bowl; turn it to coat with the oil on all sides. Cover with plastic wrap and let rise at room temperature for 30 minutes, then refrigerate for 24 hours. The dough will double in bulk.

When you are ready to bake, return the dough to room temperature.

Turn the dough out onto a lightly floured counter. Cut it into 2 equal pieces and shape each into a ball, making sure you don’t press out all the air bubbles that have developed (leaving air bubbles intact ensures a lighter texture once the bread is baked). Cover with a towel and let rest for 15 minutes. Meanwhile, preheat the oven with a baking stone in it to 450 degrees (preferably set on convection).

Pat 1 ball of dough into a flat 1-inch high rectangle measuring about 4 inches x 5 inches. Fold the side furthest from you over toward you and seal the seam using the heel of your hand. Turn the rectangle 180 degrees, and fold the side furthest from you over toward you; seal the seam using the heel of your hand. Fold the resulting log in half lengthwise, sealing the edges with your fingertips. Roll into a 14-inch-long cylinder with slightly tapering ends. Repeat with the remaining ball of dough. Cover with a towel and set aside to rise at room temperature for 1 hour, or until doubled in size.

Slash each cylinder diagonally at 3-inch intervals with a razor blade. Sprinkle lightly with flour. Place on a baking peel that has been sprinkled with the cornmeal; slide onto the baking stone. If you don’t have a baking peel, place the loaves on a reversed baking sheet sprinkled with cornmeal and slide them into the oven. Be sure to leave plenty of space between the loaves as they will double in the oven.

Lower the oven temperature to 425 degrees (preferably set on convection).

Bake the bread for 25 minutes, or until golden brown and crisp, misting with water from a spray bottle 3 times during the first 10 minutes of baking. (Close the oven door quickly each time to prevent heat from escaping.)

Cool the bread on a rack and serve at room temperature; alternately, freeze the bread in plastic freezer bags for up to 2 weeks and reheat for 10 minutes in a preheated 350 degree oven.

Focaccia di Recco (Cheese-Filled Flat Focaccia)

This is quintessential street food in Liguria: thin, flaky dough encasing runny cheese, the whole thing flavored with fragrant olive oil and coarse sea salt. A specialty of Recco, a small seaside town, focaccia di Recco is unlike any focaccia you may have encountered. There is no yeast in the dough, and no salt in the dough either (salt toughens the dough, so it is used only on the top crust, sprinkled on just before baking). The focaccia is baked in huge pans in a blazing hot oven, the top crust emerging burnished and brown, the bottom crust soft and almost lasagna-like thanks to the weight of the cheese.

And the cheese: Stracchino or Crescenza are the only cheeses used, runny, tangy cousins of Gorgonzola, but with no hint of blue and no aging. Almost impossible to find in most American cheese shops, Stracchino and Crescenza can be substituted by Taleggio or even a buffalo milk Mozzarella, and the resulting focaccia will be delicious… but not quite the same as the original. You can mail-order Stracchino from igourmetcom . We met Luigi Guffanti in Piedmont, when we visited with my parents on the Lago Maggiore, and his cheeses are delicious!!

Serves 2 as a main course and 4 as an appetizer

For the dough:

  • 1 and ½ cups unbleached all-purpose flour, plus extra for the counter
  • 2 tablespoons extra-virgin olive oil, plus extra for greasing the bowl and the pan
  • ½ cup plus 2 tablespoons room-temperature water, plus extra as needed

For the filling:

  • 6 ounces Stracchino or Crescenza, diced

To bake:

  • 1 tablespoon extra-virgin olive oil
  • 1/2 teaspoon coarse sea salt

Make the dough: Place the flour the olive oil in a bowl. Add ½ cup plus 2 tablespoons of room-temperature water and stir with a wooden spoon until the dough comes together. Turn out onto the counter and knead for 5 minutes, adding water if the dough is dry or flour if the dough is sticky.

The dough should be soft and supple, or you will not be able to roll it out until it is nearly transparent later; resist the temptation to add too much flour or it may be tough later. Turn the dough out into an oiled bowl, shape into a ball, and wrap. Let rest 30 minutes at room temperature (or refrigerate up to 2 days; return to room temperature before rolling out).

Meanwhile, preheat the oven with a baking stone in it to 550°.

Cut the dough in 2 pieces and shape each into a ball. Cover and set aside 20 minutes to relax.

Roll out both pieces on a lightly floured counter until quite thin and allow to rest on a floured counter for 5 minutes to relax and make stretching easier. Make sure there is some flour under the dough or the dough will stick to the counter.

Roll out each piece until nearly transparent (or drape the dough over the backs of your hands and stretch by pulling your hands apart); if the dough tears, patch with your fingers. (This is a very easy dough to work with, and is very versatile.)

Generously oil a round 14-inch pizza pan (use about 1 tablespoon: don’t be skimpy with the oil or the texture of the focaccia won’t be right) and line it with 1 piece of dough, allowing excess dough to hang over the sides (there should be at least 1 inch of excess dough on all sides).

Scatter the Stracchino over the dough, then cover with the other piece of dough. Press the edges to seal and run the rolling pin over the edge of the pan to cut off excess dough, then seal again. (Excess dough can be refrigerated for up to 2 days, covered, and used to make other focaccias; you can also freeze it for up to 1 month and defrost as needed).

To bake: Brush the top of the focaccia with the olive oil and sprinkle it with the salt. Make a few small tears in the top of the dough (this allows air to escape, preventing the dough from doming as a result of accumulated steam as the focaccia bakes) and bake on the baking stone in the preheated 550° oven for 7 minutes, or until the dough is lightly golden and puffed with a few brown spots. You do not want the dough to take on a cracker-like texture. Serve piping hot.

Swiss Chard & Pecorino Crespelle

Cooks in the Italian countryside often make simple crespelle (the Italian word for crepes) with flour and water only, no eggs or milk or fats added. The result is a slightly chewy, hearty wrapper that best encases sharp cheeses such as Pecorino, or a thin slice of salty Prosciutto, or, as below, a garlic-laced vegetable filling.

I serve these crespelle as a vegetarian main course when I am inspired by the greens at the market; broccoli raab, Swiss chard, spinach, beet greens, or escarole all work well. You can even combine a few different greens to obtain a more complex flavor.

The crespelle can be made up to 12 hours ahead and kept covered with plastic wrap at room temperature until needed. Leftovers can be refrigerated up to 2 days in a tightly sealed plastic bag, but my guess is, there won’t be any leftovers once you try these!

Serves 2 as a main course, 4 as an appetizer

For the crespelle:

  • 1 cup unbleached all-purpose flour
  • 1/4 teaspoon sea salt
  • 1 cup room-temperature water, plus extra as needed
  • 1 tablespoon extra-virgin olive oil

For the filling:

  • 1 tablespoon plus 1/4 teaspoon sea salt
  • 1 bunch Swiss chard, leaves only, thoroughly washed and chopped
  • 1/4 teaspoon chili flakes
  • 1 garlic clove, very finely minced
  • 1 tablespoon extra-virgin olive oil
  • 1 ounce (1/4 cup) freshly grated Pecorino Romano

Make the crespelle: Sift the flour and salt into a medium bowl. Whisking all the while, beat in enough warm water (about 1 cup) to make a smooth, fluid, fairly thin batter that flows like heavy cream. Strain through a sieve into a clean bowl.

Heat an 8-inch round cast iron or nonstick skillet over high heat. Brush very lightly with some of the olive oil, and pour in about 1/4 cup or so of the batter (measure first, but use a ladle to spoon it into the pan for ease), tilting the pan immediately to spread it all the way to the edges. (If the batter does not spread easily, thin it out with additional water.) The batter should barely cover the base of the skillet, or else the crespelle will be too thick and therefore tough.

Cook 3 minutes, or until lightly crisp around the edges and spotted lightly on the bottom. Turn and cook the other side for 1 minute, or until lightly speckled with brown spots. Remove to a plate; continue with the remaining batter, making (ideally) eight crespelle in all.

Make the filling: Bring 2 quarts of water to a boil. Add 1 tablespoon of the salt and drop in the chard leaves. Cook 5 minutes, or until soft. Drain, cool under running water, and squeeze dry. Chop finely and place in a bowl. Add the remaining 1/4 teaspoon of salt, the garlic, chili, olive oil, and Pecorino. Stir well and taste for seasoning; adjust as needed.

Arrange the crespelle in a single layer on a tray. Top evenly with some of the filling, fold into quarters, and enjoy.

Everyday Bread

This is the sort of bread you crave when you need comfort. Not too airy, and certainly not dense, it has a moist crumb, pleasantly sweet taste of wheat, and a thin, crackling crust. The addition of a bit of sugar and milk yields a browner, sweeter crust; the olive oil results in a moister, cakier crumb. I prefer the bread baked from dough that has had a chance to mellow overnight in the refrigerator: its flavor is more complex, its air bubbles somewhat larger.

Here I baked the bread as a boule (or large sphere); but the same dough can be baked flat with olive oil and sea salt, for focaccia; or flattened into a slipper shape for a decidedly unrustic take on ciabatta; or rolled thin into baguette…. depending on the shape you choose, the bread will take different amounts of time to bake through, as a taller dough takes longer than a flatter one. But to have a bread with a properly chewy crust, you need to bake the loaf at least until it sounds hollow when thumped from the bottom.

Makes 2 large loaves (About 12 ounces each)

Place the flour, yeast, sugar, and 1 and 1/2 teaspoons of the salt in a large bowl. Mix well with a wooden spoon.

Add 1/4 cup of the milk and all of the water, and stir well. Add the olive oil and stir again. If the dough is too dry to gather around the spoon, add a bit more water by the teaspoon until the dough gathers into a soft mass around the spoon. If the dough is sticky, add a bit of flour by the teaspoon until it forms a cohesive, soft mass.

Turn the dough out onto a lightly floured counter and knead vigorously for 10 minutes, or until it is very smooth and elastic. Try to add as little flour as possible to the dough as you knead it; the more flour you add, the denser the bread will be. It is all right if the dough sticks to your hands a little; knead it faster and it will tend to stick less. The dough is kneaded sufficiently when it is smooth and even in texture all the way through, and when it springs back when poked with a finger; it will also stretch about 6 inches without tearing when pulled apart with two hands.

Lightly oil a large bowl and place the dough in it. Turn it to coat with the oil and cover with plastic wrap. Let rise at room temperature for 1 hour, or until starting to increase in volume. Refrigerate 12 to 24 hours (a 24 hours rise yields a tastier dough). Return to room temperature when you are ready to shape the dough and bake the bread.

One hour before you are ready to bake the bread, and after it has returned to room temperature, preheat the oven with a baking stone on the bottom rack to 425 degrees (preferably set on convection bake). Remove the two other racks so that you have room to slide the two loaves onto the hot baking stone later.

Turn the risen dough out onto a very lightly floured counter and cut it into 2 even pieces. Shape each into a round, taut ball. I do this by cupping the dough between my two hands and rotating it a little at a time while putting pressure on the bottom and squeezing my hands together on the very base of the dough. Place 1 piece of parchment paper on an upturned baking sheet (in other words, the baking sheets will have the rims facing down to facilitate sliding the loaves into the oven) and dust each piece of parchment paper with cornmeal. Place one shaped dough ball on each cornmeal-dusted parchment paper and cover with plastic wrap. Let rest 1 hour, or until doubled in size.

Uncover, slash each loaf diagonally with a sharp knife three times to score the top (this allows the crust to expand without tearing and looks nice), and brush with the remaining tablespoon of milk. Sprinkle with the remaining 1/8 teaspoon of salt.

Quickly slide the loaves into the oven and onto the hot baking stone, one at a time, using the upturned baking sheets as paddles. Close the oven door very quickly.

Using a plant mister, spray the loaves three times with water during the first 10 minutes of baking. Be sure to close the oven door quickly each time or else the oven temperature will drop.

Bake a total of 30 minutes, or until the loaves are a deep, golden color flecked with brown, and sound hollow when thumped on the bottom. Cool on racks and serve at room temperature. The loaves can be frozen, well wrapped in plastic and placed in freezer-safe bags, for up to 2 weeks, then thawed and reheated in a preheated 350 degree oven for 10 minutes.

Fennel & Dill Salt-Cured Salmon over Baby Greens

Every summer, when it gets very hot, my husband and I salt-cure a salmon filet. It’s not only a quick thing to do; it yields enough fish to easily feed a dozen people and maybe even find yourself with leftovers the next day for topping crostini with Mascarpone and chives, or enriching a plate of homemade egg tagliatelle.

Basically a gravlax, this recipe requires only a pristine piece of salmon (I much prefer wild sockeye for its clean, intense flavor), sea salt, sugar, a few herbs and spices, and 48 hours of patience. Most gravlax recipes have you enclose the salmon in plastic while curing in the refrigerator; I find the flavor brighter if the fish is simply allowed to sit in a covered container, where it can breathe.

The most important thing when you are ready to serve the salmon is to use a very sharp knife to slice it as thinly as possible, and to serve it very, very cold.

If you aren’t sure about the weight of the salmon, weigh it; the amount of salt prescribed is for a 2-pound filet. If the filet is smaller, it will end up too salty; if it is bigger, it may lack flavor. Adjust the quantity of salt and sugar according to the weight of the salmon filet.

Serves 8 as an appetizer

For the salmon:

  • 1 filet wild sockeye salmon (2 lbs), skin on, scales and pin bones removed, rinsed and blotted dry
  • 2 teaspoon fennel seeds
  • 2 teaspoons black peppercorns
  • 1/4 cup fine sea salt
  • 2 tablespoons sugar
  • 1/4 cup chopped fresh dill
  • grated zest of 1 lemon

For the salad:

  • 5 ounces baby greens, washed and dried
  • 1 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • juice of 1 lemon
  • 1/4 cup extra-virgin olive oil

Make the salmon: Place the salmon in a deep storage container with a tight-fitting lid, or in a large roasting pan.

Place the fennel seeds and black peppercorns in a mortar and crush with a pestle (or use a spice grinder) until medium-coarse in texture. The spices should not become pulverized, as a bit of coarseness adds to the visual and textural appeal of the final dish. Place in a small bowl and add the salt, sugar, dill, and lemon zest, and mix well.

Spread the mixture all over the salmon, on both the skin and the flesh side, putting a little more on the flesh side.

Arrange the salmon with the flesh side up. Cover the container with its lid or the roasting pan with a piece of aluminum foil, and refrigerate for 48 hours.

When you are ready to serve, blot the salmon filet on several layers of paper towels (I blot the skin side as well as the flesh side, but I try to leave the spicing intact if possible). Using a very sharp knife, cut into nearly transparent slices, leaving the skin behind and working the knife at an angle so the slices come out wider. Place the slices on a platter while you prepare the salad.

Make the salad: Toss the greens with the salt and pepper in a deep bowl. Add the lemon juice and toss again, then add the olive oil and toss one final time. Taste and adjust the seasoning.

Pile onto 8 plates. Top with the sliced salmon and enjoy immediately.

Easy Panfried Flatbread

Easy doesn’t begin to describe this amazing flatbread. I first came up with this recipe when, after making cheese-filled focaccia di Recco, a delicious specialty from Liguria, I had a bit of leftover dough. I decided to pat it out and pan-fry it, and the result was a semi-flaky, light-on-the-inside, browned-on-the-outside bread that instantly became a favorite in our home.

Because this dough has no yeast, you can make the dough up to 3 days ahead and refrigerate it until you are ready to shape and cook it, and it won’t over-ferment.

This bread is so good alongside salumi and cheeses, dragged through peppery extra-virgin olive oil, or dipped into the juices from a perfectly ripe summer tomato. You can also use it instead of flour tortillas to wrap up pretty much anything you like, from roasted vegetables to grilled beef or fried fish. I urge you to try it. All you need is a hot skillet (preferably nonstick), some parchment paper to pat out the dough (no rolling pin needed), and a few minutes of time.

Serves 4 (makes two 12-inch breads)

  • 1 cup unbleached all-purpose flour, plus extra as needed
  • 3/4 teaspoon sea salt
  • 2 tablespoons plus 4 teaspoons extra-virgin olive oil, plus extra for brushing the parchment paper
  • 1/3 cup cool water, plus extra as needed

Mix the flour and 1/2 teaspoon of the salt in a medium bowl. Add 2 tablespoons of the olive oil. Mix well. Pour in the water, and mix until the ingredients come together around the spoon while you mix, forming a dough. Add a little more water if the dough is dry and a little more flour if the dough is sticky.

Turn the dough out onto a counter and knead for 5 minutes, or until smooth and elastic and silky. The dough should feel as soft as an earlobe; if it is too firm, you have added too much flour or not enough water, and the bread will be dry and dense. If that is the case, brush the dough with a bit of water and continue kneading until silky and smooth.

Place on a lightly floured counter, dust with flour, and cover with plastic wrap. Let rest 30 minutes at room temperature (or in a sealed bag in the refrigerator for up to 3 days; bring to room temperature before shaping).

To shape the dough: Cut the dough into 2 pieces. Cut 2 sheets of parchment paper into 14-inch lengths (or use aluminum foil if you prefer). Lightly brush the parchment paper with olive oil. Place a piece of dough on each piece of parchment paper. Brush the top of each with 1 teaspoon of the remaining olive oil. Using your hands, flatten and stretch the dough until it thins out to about 10 inches. If it shrinks back, just wait 10 minutes; the gluten strands need to relax in that case, and it won’t help if you try to stretch the dough further at this time.

Flip the dough, and brush the top of each with 1 teaspoon of the remaining olive oil. Flip again and stretch into a 12-inch circle, or until the dough is very thin but not yet transparent, about 1/8-inch thick and even in thickness if possible. Season each dough circle with 1/8 teaspoon of the remaining salt.

Heat a large nonstick 12-inch skillet over high heat for 2 minutes, but do not heat it so high or so long that it begins to smoke.

Carefully transfer one dough circle to the skillet and cook 3 minutes, or until browned lightly on the bottom. Flip and cook the second side until it also begins to brown in spots, about 2 minutes. Remove to a plate and repeat with the second dough circle. Serve hot, warm, or at room temperature.
