Two-Layer Blueberry-Pistachio Semifreddo

Don’t be daunted by the long ingredient list and multiple steps in the recipe below. This is quite an easy semifreddo to put together and requires no special tools or ice cream machines. It looks striking, with two distinct layers, one intensely blueberry-colored and flavored, the other creamier and richer in dairy notes. It tastes like summer on a plate, and the surprise element is definitely the pistachios, which have a real affinity for blueberries. I used Sicilian pistachios from Bronte, which are deeply green and very aromatic; but any unsalted pistachios will do. Store any leftover pistachios (or all nuts for that matter) in the freezer to stave off rancidity; the high fat content of nuts makes them turn faster than you’d like.

Serves 8

For the cooked blueberries:

  • 3 cups blueberries
  • 1 cup sugar
  • 1 teaspoon cornstarch, dissolved in tablespoon cool water

For the dark mousse:

  • ½ cup shelled unsalted pistachios
  • ½ cup sour cream
  • ¼ pound cream cheese, softened
  • ½ cup heavy cream, chilled

For the swirled mousse:

  • 3 ounces sweetened condensed milk
  • 2 ounces milk
  • ¼ cup sugar
  • 3 ounces cream cheese, softened
  • 1/4 cup plain Greek yogurt
  • ½ teaspoon vanilla extract
  • 12 shelled unsalted pistachios, finely chopped

Make the cooked blueberries: In a 1-quart saucepan, combine the blueberries with the sugar and bring to a light boil over medium heat. Cook, stirring, until jammy, about 10 minutes. Return to a vigorous boil, stir in the cornstarch slurry while whisking, and cook 30 seconds, or until glossy and the juices are thick. Remove from the heat and cool to room temperature.

Make the dark mousse: Preheat the oven to 350 degrees. Spread the pistachios out on a tray and roast in the preheated oven 8 minutes, or until toasty. Cool and coarsely chop. Set aside.

Place the sour cream and cream cheese in a food processor and add ½ cup of the cooked blueberries. Puree until smooth and set aside. In a large bowl, beat the heavy cream to soft peaks. Fold in the blueberry-cream cheese mixture until blended, without deflating the cream. Stir in the chopped pistachios and 1 cup of the cooked blueberries.

Line a loaf pan or terrine mold with plastic wrap, allowing excess to hang over the sides. Spoon the dark mousse into the mold and freeze until firm, about 4 hours.

Meanwhile, make the swirled mousse: Combine the condensed milk, milk, and sugar in a saucepan over medium heat; cook 3 minutes, or until the sugar dissolves and the mixture bubbles. Place the cream cheese in a medium bowl; gradually add the hot milk mixture, whisking until smooth.

Stir in the yogurt and vanilla. Cool completely. Stir in the remaining cooked blueberries until the mixture looks swirly; don’t overmix, as you want to keep the mousse looking marbled. Pour over the frozen dark mousse in the mold and sprinkle with the finely chopped pistachios.

Freeze until firm, then wrap tightly in the plastic wrap and keep frozen until ready to serve (up to 1 week).

Reginette with Pine Nut & Marjoram Pesto

One of our favorite summer dishes is fresh pasta (either round corzetti or the long, curly ribbons known as reginette, pictured here) tossed with a highly fragrant pine nut pesto. We look forward to this Ligurian specialty in the cold of winter, when fresh marjoram is not an option, and make it almost weekly when the marjoram on our deck starts to grow in. For a lighter (but no less delicious) version of the sauce, you can omit the heavy cream and double the milk, as we often do at home.

This recipe is adapted from my latest cookbook, The Best Pasta Sauces.

Serves 2

For the pesto:

  • 3 tablespoons marjoram leaves
  • 1 plump garlic clove, peeled
  • ½ cup pine nuts
  • ¼ cup whole milk, plus extra as needed
  • ¼ cup heavy cream
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup extra-virgin olive oil
  • ¼ cup (1 ounce) freshly grated Parmigiano Reggiano

For the reginette:

  • 3/4 cup unbleached all-purpose flour
  • 3/4 cup semolina flour, plus extra for dusting
  • ¼ teaspoon salt
  • 2 large eggs

To cook:

  • 2 tablespoons salt

Make the pesto: Combine all the ingredients except the Parmigiano in a food processor and process until smooth. Place in a bowl large enough to accommodate the pasta later, and stir in the Parmigiano. If the sauce seems too thick, dilute with additional milk; the pesto should have the texture of heavy cream, but it won’t be perfectly smooth due to the nuts.

(The pesto keeps in the refrigerator up to 1 week as long as it is topped with a thin layer of olive oil; it can also be frozen for up to 1 month if the Parmigiano has not been stirred in.)

Make the reginette: Mix the flour, semolina flour, and salt on a counter and shape into a mound. Make a well in the center and add the eggs to the well. Using your fingertips, work the flour into the eggs, then gather into a dough and knead by hand; add a little water if the dough is too dry or a little flour if it is too moist. Knead for 10 minutes, or until smooth, then shape into a ball, wrap in plastic, and let rest 30 minutes.

Cut the pasta dough into 4 pieces. Working with 1 piece at a time and keeping the others covered, roll out each piece using a pasta machine into a thin sheet. Sprinkle each sheet generously with semolina flour and roll up loosely jelly roll-style. Cut into 1/2-inch-wide strips with curly edges using a reginette attachment. Toss with semolina flour to prevent sticking. Spread out in a single layer on a few semolina-dusted trays. (If you don’t have a reginette attachment, you can order one from Fantes or simply cut into tagliatelle or pappardelle, or whatever shape you fancy.)

To cook: Bring 5 quarts of water to a boil. Add the salt and the reginette and cook until al dente; drain, reserving 3/4 cup of the pasta cooking water.

Stir 1/4 cup of the reserved pasta cooking water into the pesto in the serving bowl. Add the drained pasta, and stir to coat. Adjust the salt if necessary and stir in additional reserved pasta cooking water if the sauce seems too thick to properly coat the pasta. Serve hot.

Spinach & Parmigiano Torta

We can’t get enough of leafy greens. Spinach, broccoli raab, escarole, beet greens, Swiss chard, kale, cabbage… at least one vegetable green and leafy finds its way to our table at every meal. And while I adore these vegetables simply steamed and dressed with lemon juice and olive oil, or sauteed with garlic and chili flakes, I love incorporating them in more “dressed up” dishes like the torta below.

Essentially a souffle, this torta is baked in a pretty oven-to-table pan so it can be served all puffed up and golden straight from its cooking vessel. Denser and less airy than a classic French souffle, it is a lovely main course accompanied by green salad and crusty bread. Try using different greens as they appear at the farmers’ markets this spring; spinach, always available, is an excellent jumping off point.

Serves 2 as a main course

  • 2 tablespoons unsalted butter, plus extra for greasing the pan
  • 1/4 cup plus 2 tablespoons freshly grated Parmigiano-Reggiano
  • 1 tablespoon plus 1/4 teaspoon sea salt
  • 1/2 pound fresh spinach, leaves only, washed thoroughly
  • 3 tablespoons unbleached all-purpose flour
  • 2/3 cup 2% or whole milk
  • 1/8 teaspoon freshly ground black pepper
  • 1/8 teaspoon freshly grated nutmeg
  • 2 large eggs, separated

Preheat the oven to 350 degrees (preferably set on convection bake). Lightly butter an 8-inch x 4-inch oven-to-table pan (or any ovenproof pan with a 4-cup capacity). Dust the bottom with 1 tablespoon of the Parmigiano.

Bring 2 quarts of water to a boil. Add 1 tablespoon of the salt and drop in the spinach. Cook 3 minutes, or until soft and silky. Drain, rinse under cool water to stop the cooking, and squeeze dry. Chop finely and set aside.

In a small but heavy-bottomed saucepan, melt the butter. Add the flour and cook, whisking constantly with a wire whisk, until the flour loses its raw smell, about 2 minutes. Do not allow the flour and butter mixture to take on any color, so monitor the heat carefully and whisk constantly.

Quickly pour in the milk, still whisking all the while to prevent lumps. Bring to a boil and cook over medium hear 3 minutes, or until thick enough to coat the back of a spoon. Whisk in the remaining 1/4 teaspoon of salt, the pepper, the nutmeg, and 1/4 cup of the remaining Parmigiano. Now whisk in the egg yolks, beating thoroughly to avoid scrambling them in the hot milk mixture. Beat in the spinach and set aside.

In a clean, dry bowl, beat the egg whites until soft peaks form, then gently fold into the spinach mixture.

Pour into the buttered oven-to-table pan and dust the top with the remaining tablespoon of Parmigiano. Bake in the preheated oven for 30 minutes, or until golden, set, and puffed. Serve hot.

Cream of Fennel Soup with Basil & Parmigiano

This soup is one of my favorite ways to enjoy fennel: creamy in texture, gentle in flavor, and delicately colored, it owes its surprising depth to the enriching action of the Parmigiano rind that simmers along with the fennel. If you don’t have a Parmigiano rind on hand, add a splash of heavy cream after pureeing the soup.

Serves 2

  • 1 large head fennel
  • 1 tablespoon extra-virgin olive oil
  • 1 small shallot, minced
  • 1 garlic clove, minced
  • 1 teaspoon fennel seeds, crushed
  • 1 teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 cup water
  • 1 cup whole or 2% milk
  • 1 Parmigiano rind
  • 6 basil leaves, cut into fine strips

Trim the fennel. Cut the fennel into 4 wedges, discard the tough core from each wedge, and slice very thinly. Reserve about 1 tablespoon of the leafy, wispy fronds for the garnish.

Place the olive oil in a heavy saucepan and add the shallot, garlic, and fennel seeds. Set over medium-low heat; cover. Cook until the shallot is lightly caramelized, about 5 minutes, stirring once in a while. Add the thinly sliced fennel, season with the salt and pepper, and cover again.

Cook 15 minutes, or until the fennel is soft, stirring once in a while. Add the water and milk, and drop in the Parmigiano rind, making sure the rind is fully submerged in the liquid. Bring to a gentle boil and lower the heat to a simmer; cook, covered, 30 minutes, or until the flavors have melded and the fennel is very tender. Watch that the soup does not boil, or the milk will curdle. Discard the rind.

Transfer carefully to a food processor and puree until perfectly smooth. Return to the pot and warm to just below a boil. Cook, uncovered, until thickened enough to coat the back of a spoon; if the soup is too thick, add a little more milk or water as needed. Adjust the seasoning and serve hot, garnished with the basil and the fennel fronds.

Roasted & Spiced Butternut Squash Soup

Spring is almost here—and while I am thrilled about the weather warming up, the longer days, and the return of birds and squirrels and chipmunks, I’m not quite ready to stop enjoying hearty, comforting winter fare quite yet. So today I made this soothing soup with roasted butternut squash, a hint of ginger and nutmeg, and a swirl of sour cream. The flavors are rich and deep, but the soup itself very low in fat and calories, and quite filling.

Be careful with the amount of ginger you use, as it really lends the soup an unmistakable spicy note; too much will take the soup from soothing to jarring!!


Serves 2

For the squash:

  • ½ pound peeled butternut squash, cut into ½-inch cubes
  • 1 large shallot, chopped
  • 1 teaspoon extra-virgin olive oil
  • 3/4 cup water, plus extra as needed
  • 1/8 teaspoon freshly grated nutmeg
  • ½ teaspoon minced ginger
  • 2 sage leaves, chopped
  • ½ teaspoon salt
  • 1/8 teaspoon freshly ground black pepper

To serve:

  • 2 cups chicken broth
  • ½ cup 2% milk, plus extra as needed
  • ¼ teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 2 tablespoons sour cream

Make the squash: Preheat the oven to 350° (preferably set on convection bake). Toss all the ingredients for the squash on a rimmed baking sheet lined with parchment paper. Roast in the preheated oven until the squash is tender, about 30 minutes, stirring once in a while. Add a bit of water if the squash is drying out or browning too much before becoming tender.

When the squash is tender, puree the squash, shallot, and ginger (along with any liquid on the baking sheet) until very smooth using a blender or food processor. Slowly pour in the broth and milk. Season with the salt and pepper and puree again.

Transfer to a pot and heat over a medium flame until the soup thickens to the consistency you like and the flavors are blended, about 5 minutes. Taste and adjust the seasoning as needed.

To serve: Ladle the soup into 2 bowls. Garnish each with dollops of sour cream and drag a toothpick through each sour cream dollop to swirl a pretty pattern through it. Serve immediately.

Broccoli Raab & Pecorino Bread Pudding

Bread puddings are an ingenious vehicle for stray bits of vegetables and cheese, stale bread, even excess steamed milk from your morning cappuccino. I don’t think I’ve ever made a bread pudding I didn’t like. The key is to taste the custard before adding the bread to ensure it is properly seasoned (in fact, season it more than you think is necessary, as the bread is neutral and requires additional seasoning). The vegetables should also be seasoned properly, so taste, taste, taste!

I prefer my bread puddings firm rather than wobbly, so I add plenty of eggs to bind the mixture properly. I also like lots of vegetables, and usually opt for greens like spinach, arugula, or broccoli raab. The vegetables should be cooked before being folded into the custard base, so they become a silky part of the whole rather than a distinct component.

Serve the bread pudding below with a simple green salad as a main course, and experiment with other vegetables if you’re inspired at the market. Just be sure to pair the cheese with the vegetable: Gruyere is lovely with mushrooms; Parmigiano with spinach; Scamorza with fennel… You get the idea.

Makes 1 large bread pudding (serves 8 as an appetizer, 4 as a main course)

For the broccoli raab:

  • 1 tablespoon extra-virgin olive oil
  • 3 garlic cloves, minced
  • ½ teaspoon chili flakes
  • 1 large bunch broccoli raab, tough stems removed, leaves coarsely chopped (about 1 pound prior to trimming)
  • 1 teaspoon salt
  • ½ cup water

For the bread puddings:

  • extra-virgin olive oil for greasing the roasting pan
  • 6 large eggs
  • 2 cups whole milk
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ½ cup freshly grated Pecorino Romano, plus 2 tablespoons for sprinkling
  • ¼ pound day-old white sliced bread, torn into 1/2-inch pieces
  • ¼ pound thickly sliced Pancetta, cut into 1/4-inch dice

Make the broccoli raab: Preheat the oven to 375° (preferably set on convection).

Place the olive oil, garlic, and chili in a 12-inch sauté pan. Warm gently over medium heat until aromatic, about 1 minute. Add the broccoli raab, season with the salt, and sauté 5 minutes, or until wilted. Add the water and continue to cook until the water evaporates and the raab is soft, about 5 more minutes. Cool to room temperature and adjust the seasoning as needed.

Make the bread pudding: Brush an 8-inch square roasting pan with olive oil.

Beat the eggs, milk, salt, pepper, and ½ cup of the Pecorino in a large bowl with a whisk until aerated and some bubbles have formed in the mixture. The longer you beat, the lighter the bread pudding will be. Taste and adjust the seasoning.

Add the bread and the sautéed raab. Mix gently with your hands so the bread soaks up some of the liquid, but do not overmix or the bread will disintegrate and lose its texture.

Spoon the mixture in the prepared roasting pan and dust with the remaining 2 tablespoons of Pecorino. Scatter the Pancetta over the top.

Bake in the preheated oven for 30 minutes, or until set, golden-brown on top, and bubbling. Let rest 5 minutes, then cut into wedges and serve hot.

Everyday Bread

This is the sort of bread you crave when you need comfort. Not too airy, and certainly not dense, it has a moist crumb, pleasantly sweet taste of wheat, and a thin, crackling crust. The addition of a bit of sugar and milk yields a browner, sweeter crust; the olive oil results in a moister, cakier crumb. I prefer the bread baked from dough that has had a chance to mellow overnight in the refrigerator: its flavor is more complex, its air bubbles somewhat larger.

Here I baked the bread as a boule (or large sphere); but the same dough can be baked flat with olive oil and sea salt, for focaccia; or flattened into a slipper shape for a decidedly unrustic take on ciabatta; or rolled thin into baguette…. depending on the shape you choose, the bread will take different amounts of time to bake through, as a taller dough takes longer than a flatter one. But to have a bread with a properly chewy crust, you need to bake the loaf at least until it sounds hollow when thumped from the bottom.

Makes 2 large loaves (About 12 ounces each)

  • 3 cups unbleached all-purpose flour, plus extra for the counter
  • 3/4 teaspoon instant yeast
  • 1 teaspoon sugar
  • 1 and 1/2 teaspoons sea salt, plus 1/8 teaspoon for sprinkling
  • 1/4 cup 2% or whole milk, plus 1 tablespoon for brushing
  • 1 cup plus 2 tablespoons room temperature water, plus extra if needed
  • 1 tablespoon extra-virgin olive oil, plus extra for greasing the bowl
  • 2 tablespoons coarse cornmeal

Place the flour, yeast, sugar, and 1 and 1/2 teaspoons of the salt in a large bowl. Mix well with a wooden spoon.

Add 1/4 cup of the milk and all of the water, and stir well. Add the olive oil and stir again. If the dough is too dry to gather around the spoon, add a bit more water by the teaspoon until the dough gathers into a soft mass around the spoon. If the dough is sticky, add a bit of flour by the teaspoon until it forms a cohesive, soft mass.

Turn the dough out onto a lightly floured counter and knead vigorously for 10 minutes, or until it is very smooth and elastic. Try to add as little flour as possible to the dough as you knead it; the more flour you add, the denser the bread will be. It is all right if the dough sticks to your hands a little; knead it faster and it will tend to stick less. The dough is kneaded sufficiently when it is smooth and even in texture all the way through, and when it springs back when poked with a finger; it will also stretch about 6 inches without tearing when pulled apart with two hands.

Lightly oil a large bowl and place the dough in it. Turn it to coat with the oil and cover with plastic wrap. Let rise at room temperature for 1 hour, or until starting to increase in volume. Refrigerate 12 to 24 hours (a 24 hours rise yields a tastier dough). Return to room temperature when you are ready to shape the dough and bake the bread.

One hour before you are ready to bake the bread, and after it has returned to room temperature, preheat the oven with a baking stone on the bottom rack to 425 degrees (preferably set on convection bake). Remove the two other racks so that you have room to slide the two loaves onto the hot baking stone later.

Turn the risen dough out onto a very lightly floured counter and cut it into 2 even pieces. Shape each into a round, taut ball. I do this by cupping the dough between my two hands and rotating it a little at a time while putting pressure on the bottom and squeezing my hands together on the very base of the dough. Place 1 piece of parchment paper on an upturned baking sheet (in other words, the baking sheets will have the rims facing down to facilitate sliding the loaves into the oven) and dust each piece of parchment paper with cornmeal. Place one shaped dough ball on each cornmeal-dusted parchment paper and cover with plastic wrap. Let rest 1 hour, or until doubled in size.

Uncover, slash each loaf diagonally with a sharp knife three times to score the top (this allows the crust to expand without tearing and looks nice), and brush with the remaining tablespoon of milk. Sprinkle with the remaining 1/8 teaspoon of salt.

Quickly slide the loaves into the oven and onto the hot baking stone, one at a time, using the upturned baking sheets as paddles. Close the oven door very quickly.

Using a plant mister, spray the loaves three times with water during the first 10 minutes of baking. Be sure to close the oven door quickly each time or else the oven temperature will drop.

Bake a total of 30 minutes, or until the loaves are a deep, golden color flecked with brown, and sound hollow when thumped on the bottom. Cool on racks and serve at room temperature. The loaves can be frozen, well wrapped in plastic and placed in freezer-safe bags, for up to 2 weeks, then thawed and reheated in a preheated 350 degree oven for 10 minutes.

Rosemary Spaetzle with Ricotta and Sausage

Spaetzle are tiny egg gnocchi made across Europe, especially Hungary, Austria, and Germany. They are typical of Trentino-Alto Adige, a region in Italy’s northwest that was under Austro-Hungarian rule. I often make spaetzle when I am short on time and still want a fresh pasta. They are easy to make, as long as you have a spaetzle machine (more on that later): just whisk an egg and some milk into flour, beat until smooth, and pour through the spaetzle machine into gently boiling water. When the spaetzle bob to the surface, they are ready to scoop up and toss with whatever you like: olive oil and grated Parmigiano; crushed poppy seeds and Ricotta Salata; melted butter, sugar, and cinnamon for a sweet treat; the herb-infused juices from a roast veal or chicken; or the savory sausage sauce below. One thing I do not suggest with spaetzle is a heavy tomato-based sauce, which would overwhelm the delicate flavor of the gnocchi itself. Spaetzle are also an excellent accompaniment to hearty stews and roasted meats.

There are many Spaetzle machines on the market, and some work better than others. Some people like to use a spaetzle press, which looks like a potato ricer. Other people opt for the machine that has a sliding box set atop what looks like a box grater; I prefer this model. Mine is all stainless steel and, as long as I wash it before the batter dries on it, takes just minutes to clean. I toss the machine into a sinkful of warm, soapy water while the spaetzle cook, then wash it easily afterwards.

When making spaetzle to serve with sweet embellishments, omit the pepper and rosemary in the batter, and add a pinch of freshly grated nutmeg instead.

Serves 2 as a main course, 4 as an appetizer

For the spaetzle:

  • 1 cup unbleached all-purpose flour
  • ¼ teaspoon plus 1 tablespoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 tablespoon minced fresh rosemary
  • 1/3 cup plus 1 tablespoon 2% or whole milk

For the sauce and to serve:

  • 1 teaspoon extra-virgin olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon fennel seeds
  • ¼ teaspoon chili flakes (optional)
  • ½ pound hot Italian sausage, casings removed and crumbled
  • Salt as needed
  • Freshly ground black pepper as needed
  • ¼ pound fresh whole-milk Ricotta

Make the spaetzle: Place the flour, 1/4 teaspoon of the salt, the pepper, and rosemary in a bowl. Mix well with a whisk. Make a well in the center and add the egg to the well. Start whisking the egg into the flour while you pour in the milk little by little. The aim is to have a perfectly smooth batter, so whisk vigorously when all the milk has been added. Whisking thoroughly also activates the gluten, making the spaetzle lighter when cooked. If not using right away, cover and set aside for up to 12 hours in the refrigerator; return to room temperature before cooking.

Make the sauce: Place the olive oil, garlic, fennel seeds, and chili flakes if using in a 12-inch skillet. Set over medium heat and cook until just aromatic, about 2 minutes. Watch that the garlic does not burn. Add the crumbled sausage and cook, stirring often to break it up into small pieces, until browned all over, about 5 minutes. Remove from the heat until you are ready to serve; the sauce can be made to this point up to 2 hours ahead.

Bring 4 quarts of water to a boil. Add the remaining tablespoon of salt and, using a spaetzle machine, drop the spaetzle into the boiling water. Cook until the spaetzle bob to the surface, about 1 minute, then drain, reserving 1 cup of the cooking water.

Spoon the spaetzle into the sausage in the skillet. Add the reserved cooking water and sauté over high heat 1 minute, or until the flavors have melded.

Taste for seasoning and adjust, adding salt and pepper as needed. Serve hot, scattering dollops of Ricotta over the spaetzle here and there so you can combine the Ricotta with the spaetzle as you eat.

Chive-Scented Bread Gnocchi in Sage Butter (Canederli)

These gnocchi are a specialty of Trentino-Alto Adige in Italy’s northeast, where they are called knodel in German or canederli  in Italian. They are usually rolled by hand (like gnocchi) and served floating in soup, but I prefer them pan-fried until golden brown in sage butter. I like my canederli quite soft, so I make the mixture too sticky to roll out on a counter, and use 2 spoons to drop it into simmering water instead.

Canederli should be made with a close-textured, dense, unflavored, stale bread: if the bread is light and airy, or if it is too fresh, it will absorb too much liquid and therefore call for too much flour, resulting in leaden dumplings.  You can use rye bread or whole wheat bread if you like.

I serve canederli as a main course, with an assortment of roasted vegetables, cured meats like Speck (a smoked Prosciutto from Trentino-Alto Adige), and savory cheeses like Asiago or Piave. You can also serve them alongside meat and poultry, where they’ll pick up the sauce; or drop them in a bowl of chicken soup as a soothing starter.

Serves 2 as a main course, 4 as an appetizer or side dish

  • ¼ pound crustless day-old white country bread, cut into 1/2-inch cubes
  • 1 cup snipped chives
  • 1 teaspoon caraway seeds
  • 2 tablespoons plus ¾ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 2 large eggs
  • ½  cup whole milk
  • ¼ cup to ½ cup unbleached all-purpose flour, plus extra if needed
  • 2 tablespoons  unsalted butter
  • 12 sage leaves, thinly sliced

Place the bread in a large bowl. Add the chives, caraway, ½ teaspoon of the salt, and the pepper. Stir a bit to mix, then add the eggs and mash vigorously with your hands until the bread breaks down. Add the milk and mash again; the point is to create a dense paste with the ingredients at this stage.

Add the flour and mash again with your hands; the mixture should hold together and form a gluey paste; add more flour by the tablespoon if it does not. The mixture should be sticky at this point; if it is not sticky, it will form heavy canederli once cooked. Depending on how stale and dry your bread is, the mixture will require different amounts of flour: drier, staler bread requires less flour. If not cooking right away, cover and set aside for up to 2 hours at room temperature.

Before cooking all the canederli, I suggest testing their texture so you can adjust with additional flour if needed.

When you are ready to serve, bring 4 quarts of water to a boil. Add 2 tablespoons of the salt. Using 2 spoons, drop 1 tablespoon of the batter into the boiling water, and cook until it bobs to the surface. The canederli is not fully cooked at this point, but you can gauge its texture; if it has fallen apart and disintegrated into the water, the batter requires additional flour to hold it together, so add a bit of flour and mix again to incorporate, then test the batter again.  It is fine if a few small bits do come away, but the test canederli should remain mostly whole.

Return the water to a gentle boil. Drop the batter  by the tablespoon into the water, forming about 20 tablespoon-sized dumplings. They will look misshapen and lumpy, and some small bits may float off and break away, but that is fine.  Maintain the heat so the water is just simmering, not vigorously boiling, or the canederli may disintegrate. Cook 8 minutes, uncovered.

Remove with a slotted spoon to a tray.  You can do this up to 4 hours ahead and hold at room temperature on an oiled tray, covered with plastic wrap.

Melt the butter with the sage over medium-high heat in a nonstick 12-inch skillet. Add the canederli and sauté 5 to 8 minutes, or until golden all over, turning to cook evenly. Sprinkle with the remaining ¼ teaspoon of salt and serve hot.

Creamy Cauliflower Soup with White Truffle Oil & Crispy Bacon

This amazing soup takes little active work, is very low in fat and calories, but delivers incredible depth of flavor. The trick: sweating the vegetables in a covered pot slowly, then adding just a bit of flour to thicken up the base for a velvety mouth-feel. While an immersion blender may be easier to use than a blender, I prefer the latter to obtain a rich, creamy texture.

Feel free to omit the bacon for a completely vegetarian dish;  garnish with a few roasted cauliflower florets instead in this case, to provide visual contrast.

Serves 4

  • 1 tablespoon extra-virgin olive oil
  • 1 medium yellow onion, minced
  • 1 celery stalk, minced
  • 4 garlic cloves, minced
  • 1 tablespoon thyme leaves
  • 4 cups (1 medium head) cauliflower florets, tough stems removed
  • 2 tablespoons unbleached all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper, plus extra to serve
  • 3 cups 2% or whole milk
  • 1 cup water, plus extra as needed
  • 2 slices bacon, cut into tiny dice
  • 2 tablespoons white truffle oil

Place the olive oil, onion, celery, garlic, and thyme in a 3-quart pot with a tight-fitting lid. Cover and set over medium-low heat. Cook until the vegetables soften, about 10 minutes, stirring once in a while as needed to prevent scorching.

Uncover, add the cauliflower, stir well, and cover again. Cook until the cauliflower softens, about 10 minutes, stirring once in a while and adding water if needed to prevent scorching.

Uncover, stir in the flour, and cook for 3 minutes, stirring often; the flour should lose its raw smell and the cauliflower and vegetables should become coated with the flour. It is fine if the cauliflower and vegetables take on a little color; this will only deepen the flavor of the soup.

Season with the salt and pepper. Pour in the milk, stirring to avoid lumps forming. Add the water and cover. Bring to a gentle boil. Simmer for 30 minutes, or until the cauliflower is very soft (it should fall apart when poked with a spoon) and the flavors have melded. Be sure not to cook the soup over too high a flame, as the milk may curdle (even if it does, the soup will be blended later, so it is fine).

Transfer to a blender, being careful as the soup is quite hot. Cover the blender lid with a towel to prevent splashing and puree the soup  until thick and smooth, about 2 minutes. If the soup is too thick for your taste, add as much water as needed to dilute to a consistency you like; the soup should be thick enough to coat the back of a spoon.

Return to the pot and keep warm. Adjust the seasoning as needed.

When you are ready to serve, place the diced bacon in a skillet and cook over medium heat until golden and crispy. Drain on paper towels.

Serve the soup hot, drizzled with the truffle oil, garnished with the crispy bacon, and sprinkled with freshly ground black pepper.
